For the Squares:
- 1 tablespoon olive oil
- 1 small yellow onion (diced)
- 2 cups mushrooms (sliced)
- 2 cloves garlic (minced)
- 6 large eggs
- ½ cup whole milk
- ½ teaspoon dried oregano
- Salt and black pepper to taste
- ½ cup crumbled feta cheese
- ¼ cup chopped fresh parsley
- Nonstick spray or butter for greasing
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.
- Sauté the vegetables: In a skillet over medium heat, heat the olive oil and sauté the onion until soft. Add the mushrooms and garlic, cooking until browned. Remove from heat and cool slightly.
- Prepare the egg mixture: In a bowl, whisk eggs, milk, oregano, salt, and pepper. Stir in the mushroom mixture, feta, and parsley.
- Bake: Pour the mixture into the baking dish and bake for 25-30 minutes until set and golden. Let cool before slicing.
