Beef:
- 1 1/2 pounds thinly sliced beef sirloin or flank steak
Caramelized Onions:
- 2 tablespoons olive oil
- 2 large yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
- 1 tablespoon balsamic vinegar
Roll-Ups:
- 1 cup shredded Gruyère or Swiss cheese
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Caramelize Onions: In a skillet, cook onions in olive oil and butter until golden and caramelized. Add thyme, balsamic vinegar, salt, and pepper.
- Prepare Beef: Lay beef slices flat, sprinkle with garlic powder, add caramelized onions and cheese to one end of each slice. Roll up tightly.
- Bake: Place roll-ups seam-side down on a baking sheet. Bake at 375°F for 15-18 minutes until cooked through and cheese is melted. Garnish with parsley.
Notes
- For added flavor, deglaze the onion pan with 1/4 cup beef broth or red wine.
- Pair with mashed potatoes or a green salad.
- Leftovers can be reheated in the oven at 325°F until warmed through.
