Instructions
- Melt the butter and oil: In a large pot, melt butter with olive oil over medium heat.
- Caramelize onions: Add onions, sugar, salt, and pepper. Cook until golden brown and caramelized.
- Add garlic: Stir in garlic and cook for an additional minute.
- Deglaze: Pour in white wine to deglaze the pot.
- Add broth and seasonings: Stir in beef broth, thyme, and bay leaf. Simmer for 30 minutes.
- Adjust seasoning: Remove bay leaf and adjust seasoning as needed.
- Prepare toppings: Preheat broiler. Ladle soup into bowls, top with baguette slices and Gruyère cheese.
- Broil: Broil until cheese is melted and bubbling, about 3-4 minutes.
