Description

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/3 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter

Additional Ingredients:

  • 1 cup fresh peaches (peeled and diced)
  • Vegetable oil for frying
  • For the glaze: 1 cup powdered sugar, 2–3 tablespoons milk or peach juice, 1/4 teaspoon vanilla extract

Instructions

  1. Dry Ingredients: In a mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  2. Wet Ingredients: In another bowl, mix the milk, egg, vanilla, and melted butter. Add the wet ingredients to the dry and stir until just combined.
  3. Folding Peaches: Fold in the diced peaches.
  4. Frying: Heat vegetable oil to 350°F (175°C). Drop tablespoons of batter into the oil, fry each fritter for 2–3 minutes per side.
  5. Glazing: Whisk together powdered sugar, milk or peach juice, and vanilla. Dip or drizzle the glaze over warm fritters.
