Tomatoes:
- 4 medium green tomatoes, sliced 1/4-inch thick
- 1 teaspoon salt
Batter:
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 cup buttermilk
- 3/4 cup cornmeal
- 1/4 cup breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper

Instructions
- Prepare Tomatoes: Lay tomato slices on a paper towel-lined tray, sprinkle with salt, and let sit for 10 minutes. Pat dry.
- Create Batter: Place flour in a shallow bowl. Whisk eggs and buttermilk in another bowl. Combine cornmeal, breadcrumbs, garlic powder, paprika, and black pepper in a third bowl.
- Coat and Fry: Dredge tomato slices in flour, dip in egg mixture, then coat in cornmeal mixture. Fry in hot oil for 2–3 minutes per side until golden brown.
- Drain and Serve: Drain fried tomatoes on paper towels and serve hot.

- For extra crunch, use panko breadcrumbs instead of regular.
