Batter:

  • 1/2 cup buttermilk
  • 3/4 cup cornmeal
  • 1/4 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare Tomatoes: Lay tomato slices on a paper towel-lined tray, sprinkle with salt, and let sit for 10 minutes. Pat dry.
  2. Create Batter: Place flour in a shallow bowl. Whisk eggs and buttermilk in another bowl. Combine cornmeal, breadcrumbs, garlic powder, paprika, and black pepper in a third bowl.
  3. Coat and Fry: Dredge tomato slices in flour, dip in egg mixture, then coat in cornmeal mixture. Fry in hot oil for 2–3 minutes per side until golden brown.
  4. Drain and Serve: Drain fried tomatoes on paper towels and serve hot.
