Indulge in these delicious Fried Piña Colada Rings that bring a tropical twist to your table. Crispy on the outside, sweet and juicy on the inside, these fried pineapple treats are perfect as a dessert or appetizer.

Piña Colada Rings:
- 1 fresh pineapple (peeled, cored, and sliced into rings)
- 1 cup sweetened shredded coconut
- 1 cup panko breadcrumbs
- ½ cup all-purpose flour
- 2 eggs
- ¼ cup coconut milk
- 2 tablespoons rum (optional)
- 1 tablespoon sugar
- pinch of salt
- vegetable oil for frying
For Dipping Sauce:
- ½ cup Greek yogurt or sour cream
- 2 tablespoons crushed pineapple
- 1 tablespoon honey
- splash of coconut milk (to thin, if needed)
Instructions
- In a small bowl, whisk together the eggs, coconut milk, rum (if using), and sugar. Set aside. In separate shallow bowls, place the flour, and combine the panko breadcrumbs with shredded coconut and a pinch of salt.
- Pat the pineapple rings dry. Dredge each ring in flour, dip into the egg mixture, then press into the coconut-panko mixture, coating evenly on all sides.
- Heat 1–2 inches of vegetable oil in a deep skillet or saucepan to 350°F (175°C). Fry the pineapple rings in batches for 1–2 minutes per side, or until golden and crispy. Transfer to a paper towel–lined plate to drain.
- For the dipping sauce, mix the Greek yogurt or sour cream with crushed pineapple, honey, and a splash of coconut milk to desired consistency.
- Serve the fried pineapple rings warm with dipping sauce on the side.
Notes
- You can air fry at 400°F for 10–12 minutes, flipping halfway, for a lighter version.
- Add lime zest to the dipping sauce for extra brightness.
