For the cookies:
- 1 cup unsalted butter (softened)
- 1/2 cup powdered sugar (plus more for rolling)
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup rainbow sprinkles
- 1/2 cup finely chopped pecans (optional)
Instructions
- Preheat the oven: Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugar: In a large bowl, cream the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
- Add dry ingredients: Gradually add the flour and salt, mixing until a soft dough forms. Fold in the rainbow sprinkles and chopped pecans if using.
- Form and bake: Roll the dough into 1-inch balls and place them on the prepared baking sheet about 1 inch apart. Bake for 12–14 minutes until lightly golden.
- Coat with sugar: Allow the cookies to cool for 5 minutes, then roll them in powdered sugar while still warm. Once fully cooled, roll them in powdered sugar again for a snowy finish.
- Storage: Store in an airtight container.
