Ingredients
Scale
Dry Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Wet Ingredients:
- 2 large eggs
- 1 1/2 cups whole milk
- 1 teaspoon vanilla extract
Other:
- vegetable oil for frying
- powdered sugar for dusting
Instructions
- Prepare the Batter: In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. In another bowl, whisk the eggs, milk, and vanilla extract until smooth. Gradually pour the wet ingredients into the dry ingredients, whisking until a smooth batter forms.
- Fry the Bites: Heat about 2 inches of vegetable oil in a large deep skillet or Dutch oven to 350°F (175°C). Working in batches, carefully drop heaping tablespoons of batter into the hot oil. Fry for about 2-3 minutes per side, or until golden brown and cooked through.
- Drain and Serve: Use a slotted spoon to transfer the funnel cake bites to a paper towel-lined plate to drain excess oil. Dust generously with powdered sugar before serving warm.
Notes
- For extra flavor, try sprinkling cinnamon sugar instead of plain powdered sugar.
- These are best enjoyed fresh but can be reheated in the oven at 300°F (150°C) for a few minutes.
