Creamy Sauce:

  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup sliced mushrooms (cremini or button)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon dried thyme or Italian seasoning
  • 1 tablespoon lemon juice
  • Chopped parsley for garnish (optional)

Instructions

  1. Prepare Salmon: Season both sides of the salmon fillets with salt and pepper. Cook in olive oil until golden brown. Set aside.
