Ingredients

Scale

For Garlic Butter Shrimp:

  • 1 pound large shrimp, peeled and deveined, tails on or off
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For Mashed Potatoes:

  • 2 pounds russet potatoes, peeled and cut into chunks
  • 1/2 cup whole milk
  • 4 tablespoons unsalted butter (for potatoes)
  • 1/4 cup sour cream
  • 1 teaspoon salt (for potatoes)
  • 1/2 teaspoon black pepper (for potatoes)
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Making Mashed Potatoes: Bring a large pot of salted water to a boil and add the potato chunks. Cook for 15 to 20 minutes until fork-tender. Drain and return potatoes to the pot. Add milk, butter, sour cream, salt, and black pepper. Mash until smooth and creamy, adjusting seasoning as needed. Cover to keep warm.
  2. Preparing Garlic Butter Shrimp: Pat shrimp dry with paper towels and season with paprika, salt, and pepper. In a skillet over medium heat, melt butter and olive oil. Add garlic and sauté until fragrant. Cook shrimp for 2 to 3 minutes per side until pink and opaque. Stir in lemon juice.
  3. Serving: Divide mashed potatoes among plates, top with garlic butter shrimp, and garnish with parsley.

Notes

  • You can substitute Yukon Gold potatoes for a creamier mash.
  • For extra flavor, add Parmesan cheese to the mashed potatoes.
  • If desired, add a pinch of red pepper flakes to the shrimp for heat.
