  • 1 tsp fresh rosemary or 1/2 tsp dried rosemary
  • Salt and pepper to taste

Potatoes:

  • 1 1/2 lbs baby potatoes, halved
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Potatoes: In a large skillet over medium heat, add 1 tablespoon olive oil and 1 tablespoon butter. Cook halved baby potatoes cut side down for 10–12 minutes until golden and tender. Season with salt and pepper, then set aside.
  2. Steak Bites: Add remaining olive oil to the skillet over medium-high heat. Sear steak cubes in a single layer for 2–3 minutes per side. Season with salt and pepper. Reduce heat to medium.
  3. Add remaining butter, minced garlic, thyme, and rosemary to the skillet. Stir for 1–2 minutes. Return cooked potatoes to the pan and toss in garlic herb butter.
  4. Garnish with parsley and serve hot.
