- 1 tsp fresh rosemary or 1/2 tsp dried rosemary

Potatoes:
- 1 1/2 lbs baby potatoes, halved
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Potatoes: In a large skillet over medium heat, add 1 tablespoon olive oil and 1 tablespoon butter. Cook halved baby potatoes cut side down for 10–12 minutes until golden and tender. Season with salt and pepper, then set aside.
- Steak Bites: Add remaining olive oil to the skillet over medium-high heat. Sear steak cubes in a single layer for 2–3 minutes per side. Season with salt and pepper. Reduce heat to medium.
- Add remaining butter, minced garlic, thyme, and rosemary to the skillet. Stir for 1–2 minutes. Return cooked potatoes to the pan and toss in garlic herb butter.
- Garnish with parsley and serve hot.
