  • ½ tsp ground pepper
  • 1 tbsp olive oil

Steak and Butter

  • 1½ lbs. sirloin steak, cut into 1-inch cubes (alternative options: beef tenderloin, NY strip steak, or stir fry meat)
  • 4 tbsp unsalted butter, divided (½ stick)
  • Freshly chopped parsley, optional for garnish


Instructions

  1. Heat the skillet and melt butter: Place a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Let the butter melt completely and begin to sizzle, preparing the pan for cooking.
  2. Cook the potatoes with seasonings: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to the skillet. Allow the potatoes to cook undisturbed for about 4 minutes to form a crispy exterior. Then stir and continue cooking for another 3-4 minutes until the potatoes are fork tender. Remove the potatoes from the skillet and set aside in a bowl.
  3. Sear the steak bites: Increase the heat to high and return the skillet to the stove. Add the remaining 2 tablespoons of butter and stir until melted. Place the steak cubes in a single layer in the skillet and cook without moving them for 1 minute to develop a good sear. Flip or stir and cook for another 1-2 minutes or until desired doneness is reached. Remove the skillet from heat.
