For the Potatoes:
- 1 1/2 pounds baby potatoes, halved or quartered
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons unsalted butter, divided
- 4 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- Chopped fresh parsley for garnish (optional)
Instructions
- Prepare the Potatoes: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the halved potatoes, season with half the salt and pepper, and cook until golden and fork-tender, about 15-20 minutes. Remove and set aside.
- Cook the Steak Bites: Add 1 tablespoon of olive oil to the skillet. Season the steak bites with remaining salt and pepper. Sear in a single layer for 2-3 minutes per side until browned. Reduce heat to medium-low.
- Make the Garlic Butter Sauce: Add butter, garlic, thyme, rosemary, and parsley to the skillet. Stir until butter melts and garlic is fragrant, about 1-2 minutes.
- Combine Everything: Return potatoes to the skillet, toss to coat in the garlic butter, and garnish with parsley. Serve warm.
