Instructions

  1. Prepare Zucchini Noodles: Using a spiralizer or vegetable peeler, create zucchini noodles from the zucchinis and set them aside, ready for cooking.
  2. Cook Chicken: Cut the chicken breasts into bite-sized pieces. Season with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the chicken pieces until they are golden brown and fully cooked through, about 6-8 minutes. Remove and set aside.
  3. Sauté Aromatics and Pepper: In the same skillet, add sesame oil. Once heated, add the minced garlic and sliced bell pepper. Sauté for 2-3 minutes until fragrant and slightly softened.
  4. Combine Ingredients: Return the cooked chicken to the skillet. Add the zucchini noodles along with the soy sauce. Toss everything together gently, cooking for another 2-3 minutes until the zucchini noodles are just tender but not mushy.
  5. Finish and Serve: Remove the skillet from heat. Stir in the chopped green onions and sprinkle the optional sesame seeds on top as garnish. Serve immediately for best flavor and texture.
