Ingredients

Scale

For the Chicken:

  • 1 1/2 pounds boneless skinless chicken breasts, cut into thin strips
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided

For the Stir-Fry:

  • 8 ounces cremini or button mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/3 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced (for garnish)
  • Sesame seeds, optional (for garnish)

Instructions

  1. Marinate the Chicken: In a medium bowl, toss chicken strips with 2 tablespoons soy sauce and cornstarch until coated.
  2. Stir-Fry the Chicken: Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry for 4 to 5 minutes until browned and cooked through. Remove from skillet and set aside.
  3. Prepare the Vegetables: Add the remaining oil to the skillet, then sauté mushrooms, bell pepper, and broccoli for 3 to 4 minutes until tender-crisp.
  4. Add Flavor: Stir in garlic and ginger, cooking for 1 minute until fragrant. Return chicken to the skillet.
  5. Make the Sauce: In a small bowl, whisk together chicken broth, oyster sauce, 1 tablespoon soy sauce, sesame oil, and black pepper. Pour sauce into the skillet and stir to coat evenly.
  6. Finish and Serve: Cook for 2 to 3 minutes until the sauce thickens slightly. Garnish with green onions and sesame seeds before serving.
