Description

These Garlic Parmesan Smashed Potatoes are a crispy, flavorful side dish perfect for any meal. Baby potatoes are boiled, smashed, and roasted with garlic, Parmesan, and herbs until golden brown and delicious.

Baby Potatoes:

  • 2 pounds baby potatoes (red or yellow)
  • 1 tablespoon salt (for boiling)

Garlic Parmesan Topping:

  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)


Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil Potatoes: Boil baby potatoes with salt until fork-tender. Drain and slightly dry.
  3. Smash Potatoes: Flatten potatoes with a glass or masher on the baking sheet.
  4. Prepare Topping: Mix olive oil, garlic, salt, pepper, and Italian seasoning. Spread over potatoes.
  5. Add Cheese: Sprinkle with Parmesan.
  6. Roast: Roast for 20–25 minutes until crispy.
