  • 4 large eggs (room temperature)
  • 1 teaspoon vanilla extract

For the coconut-pecan frosting:

  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans or line with parchment.
  2. Pour boiling water over chopped German chocolate and stir until smooth; let cool.
  3. Whisk together flour, baking soda, and salt in a bowl.
  4. Cream butter and sugar in a large mixing bowl until light and fluffy.
  5. Add eggs one at a time, beating well after each. Mix in vanilla and melted chocolate.
  6. Alternately add dry ingredients and buttermilk, starting and ending with dry ingredients.
  7. Divide batter evenly among the prepared pans. Bake for 25–30 minutes or until a toothpick comes out clean.
  8. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  9. For the frosting: Combine evaporated milk, sugar, egg yolks, and butter in a saucepan. Cook over medium heat, stirring constantly, until thickened—about 10–12 minutes.
  10. Remove from heat and stir in vanilla, coconut, and pecans. Cool to room temperature before spreading.
  11. Assemble the cake by stacking the layers with coconut-pecan frosting between each, and spread remaining frosting on top. Leave sides unfrosted for a traditional look.
