Description

Ingredients

Scale

Crust:

  • 1 1/2 cups gluten-free rolled oats
  • 1/2 cup almonds or walnuts
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil (melted)
  • pinch of salt

Filling:

  • 1 1/2 cups raw cashews (soaked)
  • 1/2 cup canned coconut cream
  • 1/3 cup maple syrup
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries (chopped)

Topping:

  • 1/2 cup sliced strawberries for garnish (optional)

Instructions

  1. Prepare the Crust: Line pan, blend oats and nuts, add syrup, oil, salt, pulse, press into pan.
  2. Make the Filling: Blend soaked cashews, coconut cream, syrup, lemon juice, vanilla, strawberries until smooth. Pour over crust.
  3. Freeze: Chill for 4-6 hours until firm. Thaw before serving. Garnish with sliced strawberries.

Notes

  • Store leftovers in the freezer for up to 1 month.
  • For a nut-free version, replace cashews with silken tofu and crust nuts with sunflower seeds.
