Crust:
- 1 1/2 cups gluten-free rolled oats
- 1/2 cup almonds or walnuts
- 1/4 cup maple syrup
- 1/4 cup coconut oil (melted)
- pinch of salt
Filling:
- 1 1/2 cups raw cashews (soaked)
- 1/2 cup canned coconut cream
- 1/3 cup maple syrup
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh strawberries (chopped)
Topping:
- 1/2 cup sliced strawberries for garnish (optional)
Instructions
- Prepare the Crust: Line pan, blend oats and nuts, add syrup, oil, salt, pulse, press into pan.
- Make the Filling: Blend soaked cashews, coconut cream, syrup, lemon juice, vanilla, strawberries until smooth. Pour over crust.
- Freeze: Chill for 4-6 hours until firm. Thaw before serving. Garnish with sliced strawberries.

- Store leftovers in the freezer for up to 1 month.
- For a nut-free version, replace cashews with silken tofu and crust nuts with sunflower seeds.
