Ingredients

Scale

Dry Ingredients:

  • 1 1/2 cups gluten-free all-purpose flour (with xanthan gum)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Wet Ingredients:

  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For Rolling:

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the gluten-free flour, baking soda, cream of tartar, salt, and cinnamon.
  3. Cream the butter and sugar: In a separate large bowl, cream the softened butter and 3/4 cup sugar until light and fluffy.
  4. Add wet ingredients: Beat in the egg and vanilla extract until well combined.
  5. Combine the dough: Gradually mix in the dry ingredients to form a soft dough.
  6. Prepare the cinnamon-sugar: In a small bowl, stir together the remaining 2 tablespoons of sugar and 1 teaspoon cinnamon.
  7. Shape and bake: Scoop tablespoon-sized portions of dough, roll into balls, then coat each ball in the cinnamon-sugar mixture. Place on the baking sheet and bake for 9–11 minutes.
  8. Cool and enjoy: Let the cookies cool on the sheet before transferring to a wire rack to cool completely.
