For the mushrooms:
- 1 tablespoon sesame oil
- 1 pound mushrooms (cremini, button, or shiitake), cleaned and sliced
- 2 cloves garlic, minced
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon soy sauce
For the sauce:
- 1 tablespoon rice vinegar
- 1 teaspoon maple syrup or honey
- 1 teaspoon grated fresh ginger
- 1 tablespoon water
- 1 teaspoon sesame seeds (optional)

Instructions
- Heat sesame oil: In a large skillet, heat sesame oil over medium-high heat.
- Sauté mushrooms: Add sliced mushrooms and sauté for 5–7 minutes until browned.
- Add garlic and ginger: Stir in minced garlic and ginger; cook until fragrant.
- Make the sauce: Whisk together gochujang, soy sauce, rice vinegar, maple syrup, and water.
- Cook with sauce: Pour sauce over mushrooms, cook for 2–3 minutes.
- Garnish and serve: Remove from heat, garnish with sesame seeds and green onions.
