  • 2 medium apples, thinly sliced
  • Caramelized Apples:

  • 2 tablespoons unsalted butter
  • 2 tablespoons light brown sugar
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • Egg Wash and Optional:

  • 1 egg, beaten with 1 tablespoon water (for egg wash)
  • Optional: honey for drizzling and extra thyme sprigs for garnish

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Caramelize Apples: In a skillet, melt butter over medium heat. Add apples, brown sugar, thyme, cinnamon, and salt. Cook until caramelized, about 6-8 minutes. Set aside to cool slightly.
  3. Prepare Pastry: Place puff pastry on the baking sheet. Spoon apple mixture in the center, place Brie on top, and top with remaining apples. Fold pastry over, trimming excess and sealing edges.
  4. Brush with Egg Wash: Brush pastry with egg wash.
