Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. Whisk dry ingredients: In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cream butter and sugars: In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then vanilla and sour cream, mixing until smooth.
  4. Combine wet and dry ingredients: Gradually add dry ingredients to wet, mix until just combined. Fold in diced apples.
  5. Fill muffin cups: Spoon a small amount of batter into each cup, place a caramel piece in the center, cover with more batter until ¾ full.
  6. Add topping: Mix brown sugar and cinnamon, sprinkle over muffin tops.
