For the Chicken Skewers:
- 1 1/2 lbs boneless skinless chicken thighs (cut into 1.5-inch pieces)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons red wine vinegar
- 3 garlic cloves (minced)
- 1 tablespoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

For the Feta Fries:
- 4 medium russet potatoes (cut into wedges)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- salt and pepper to taste
- 1/2 cup crumbled feta cheese
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Marinate the Chicken: Whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, cumin, salt, and pepper. Toss chicken pieces in the marinade and refrigerate for at least 30 minutes.
- Prepare the Feta Fries: Toss potato wedges with olive oil, garlic powder, oregano, salt, and pepper. Bake until crispy, then sprinkle with feta during the last 10 minutes.
- Grill the Chicken: Thread marinated chicken onto skewers and grill for 4–5 minutes per side until cooked through.
- Serve: Enjoy the hot chicken skewers with feta fries, garnished with parsley if desired.
Notes
- Soak wooden skewers in water for at least 30 minutes to prevent burning.
- Serve with tzatziki or a squeeze of fresh lemon for extra flavor.
- You can also cook the skewers in the oven or air fryer if a grill isn’t available.
