  • 3 garlic cloves (minced)
  • 1 tablespoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • wooden or metal skewers

For the Feta Fries:

  • 4 medium russet potatoes (cut into wedges)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Marinate the Chicken: Whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, cumin, salt, and pepper. Toss chicken pieces in the marinade and refrigerate for at least 30 minutes.
  2. Prepare the Feta Fries: Toss potato wedges with olive oil, garlic powder, oregano, salt, and pepper. Bake until crispy, then sprinkle with feta during the last 10 minutes.
  3. Grill the Chicken: Thread marinated chicken onto skewers and grill for 4–5 minutes per side until cooked through.
  4. Serve: Enjoy the hot chicken skewers with feta fries, garnished with parsley if desired.
