Ingredients

For the Chicken Skewers:

  • Boneless skinless chicken thighs, cut into 1-inch pieces
  • Olive oil

  • Wooden or metal skewers

For the Lemon Rice:

  • Long-grain white rice
  • Chicken broth (or water)
  • Onions, finely chopped

Instructions

  1. Marinate the chicken: In a bowl, whisk together olive oil, lemon zest, lemon juice, garlic, oregano, salt, and pepper. Add the chicken pieces to the marinade, coat well, and refrigerate for at least 30 minutes, preferably 2 hours.
