  • 3 large eggs
  • ⅓ cup fresh lemon juice (about 2 lemons)
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

For garnish:

  • Chopped fresh dill or parsley

Instructions

  1. Prepare the soup: Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened. Stir in garlic and cook until fragrant. Add chicken broth and bring to a gentle boil. Add orzo and cook until tender. Stir in shredded chicken.
