For the Naan Bites:
- 4 mini naan breads
For the Greek Salad Topping:
- 1/2 cup hummus (classic or roasted garlic)
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 1 tablespoon fresh dill, chopped
- 1 tablespoon olive oil
- 1 teaspoon red wine vinegar
- Salt and pepper, to taste
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Bake the Naan: Place mini naan breads on a baking sheet and bake for 5–7 minutes until slightly crisp but still soft in the center.
- Prepare the Greek Salad Topping: In a bowl, combine cherry tomatoes, cucumber, olives, red onion, dill, olive oil, and red wine vinegar. Toss to combine and season with salt and pepper.
- Assemble the Naan Bites: Remove naan from the oven, let cool slightly, spread hummus over each naan, top with the Greek salad mixture, sprinkle with feta, and slice into quarters or serve whole.
Notes
- For a vegan version, omit the feta or use plant-based feta.
- Best served fresh but can be prepped in advance and assembled just before serving.
