For the Salad:
- 2 cups cooked chicken breast, shredded or chopped
- ½ cup plain Greek yogurt
- 1 tablespoon mayonnaise (optional for creaminess)
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1 celery stalk, finely chopped
- ¼ cup red onion, finely chopped
- ¼ cup red grapes, halved
- ¼ cup chopped walnuts or almonds
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste

Instructions
- In a large bowl, combine the Greek yogurt, mayonnaise (if using), Dijon mustard, and lemon juice. Stir until smooth. Add the shredded chicken, celery, red onion, grapes, nuts, and parsley.
- Season with salt and pepper to taste. Mix everything together until evenly coated.
- Chill in the refrigerator for at least 20 minutes before serving to allow the flavors to meld.
