Description

A flavorful and tropical grilled chicken recipe featuring marinated chicken breasts and caramelized fresh pineapple rings, perfect for a quick and vibrant meal in just 30 minutes.

Ingredients

Scale

Chicken and Marinade

  • 4 chicken breasts (about 1.5 lbs or 680 g)
  • 1/4 cup soy sauce (60 ml)
  • 2 tablespoons brown sugar (30 g)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons lime juice (30 ml)
  • Salt and pepper, to taste

For Grilling

  • 1 medium fresh pineapple, sliced into rings
  • 1 tablespoon olive oil (for grilling)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Marinate the Chicken: In a bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, and lime juice until well combined. Coat the chicken breasts thoroughly with this marinade, cover, and refrigerate for at least 30 minutes to allow the flavors to infuse.
  2. Prepare the Pineapple: While the chicken marinates, slice the fresh pineapple into rings or chunks based on your preference, setting them aside ready for grilling.
  3. Preheat and Oil the Grill: Heat the grill to medium-high heat and lightly oil the grates with olive oil to prevent sticking.
  4. Grill the Chicken: Remove the chicken from the marinade, letting excess drip off, and place on the grill. Cook for 6-7 minutes on each side until the chicken is fully cooked through and has nice grill marks.
  5. Grill the Pineapple: Place the pineapple rings on the grill and cook for 3-4 minutes on each side until they become caramelized and slightly charred for added flavor.
  6. Serve: Arrange the grilled chicken breasts and pineapple rings on a platter. Garnish with chopped green onions and drizzle with any remaining marinade if desired. Serve immediately and enjoy the vibrant Aloha flavors.

Notes

  • For best results, use fresh pineapple instead of canned for more vibrant flavor and texture.
  • You can substitute chicken thighs if preferred; adjust cooking time accordingly.
  • If you don’t have a grill, use a grill pan or broiler to achieve similar results.
  • Marinating the chicken longer (up to 2 hours) will enhance the flavor even more.
  • Make sure to discard any leftover marinade that has touched raw chicken to avoid cross-contamination, or boil it before using as a sauce.
