Grilled Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- juice of 1 lime
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
Mango Salsa:
- 2 ripe mangos (peeled, pitted, and diced)
- ½ red bell pepper (diced)
- ¼ red onion (finely chopped)
- 1 jalapeño (seeded and minced)
- ¼ cup fresh cilantro (chopped)
- juice of 1 lime
- pinch of salt
Instructions
- Marinate the Chicken: In a small bowl, whisk together olive oil, lime juice, garlic powder, chili powder, cumin, salt, and pepper. Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over them. Let marinate in the refrigerator for at least 30 minutes.
- Prepare the Mango Salsa: Combine the diced mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl. Stir well and refrigerate until ready to serve.
- Grill the Chicken: Preheat the grill to medium-high heat. Grill the chicken for 6–7 minutes per side, or until fully cooked and internal temperature reaches 165°F. Let rest for 5 minutes, then slice and serve topped with mango salsa.
