For the Salad:

  • 1 ½ pounds boneless skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 6 cups romaine lettuce, chopped
  • 1 avocado, sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lime juice and zest, chili powder, cumin, smoked paprika, garlic, honey, salt, and pepper. Add chicken, marinate for 30 minutes to 2 hours.
  2. Grill the Chicken: Preheat grill, cook chicken for 5–7 minutes per side until cooked through. Rest and slice.
  3. Grill the Vegetables: Toss bell peppers and onion with oil, salt, and pepper. Grill for 4–5 minutes until charred and tender.
  4. Assemble the Salad: Arrange romaine in bowls, top with grilled vegetables, chicken, avocado, tomatoes, and cilantro. Serve with dressing.
