For the Salad:
- 1 ½ pounds boneless skinless chicken breasts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 6 cups romaine lettuce, chopped
- 1 avocado, sliced
- ½ cup cherry tomatoes, halved
- ¼ cup fresh cilantro, chopped
Instructions
- Marinate the Chicken: In a bowl, combine olive oil, lime juice and zest, chili powder, cumin, smoked paprika, garlic, honey, salt, and pepper. Add chicken, marinate for 30 minutes to 2 hours.
- Grill the Chicken: Preheat grill, cook chicken for 5–7 minutes per side until cooked through. Rest and slice.
- Grill the Vegetables: Toss bell peppers and onion with oil, salt, and pepper. Grill for 4–5 minutes until charred and tender.
- Assemble the Salad: Arrange romaine in bowls, top with grilled vegetables, chicken, avocado, tomatoes, and cilantro. Serve with dressing.
