Ground Beef Skillet:

  • 1 lb ground beef
  • 1 tablespoon olive oil

Sweet Potatoes & Zucchini:

  • 1 medium sweet potato (peeled and diced)
  • 1 medium zucchini (diced)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)

Seasonings:

  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cumin
  • Salt and pepper to taste

Garnish:

  • Chopped fresh parsley or green onions for garnish (optional)

Instructions

  1. Heat olive oil: In a large skillet over medium heat, heat the olive oil.
  2. Cook sweet potatoes: Add the diced sweet potatoes and cook for 8–10 minutes until lightly browned and beginning to soften. Add the onion and garlic, cook for another 2–3 minutes.
  3. Cook ground beef: Push the veggies to one side, add the ground beef, and cook until browned, about 5–7 minutes. Drain excess fat if needed.
  4. Add zucchini and seasonings: Stir in the zucchini, smoked paprika, oregano, cumin, salt, and pepper. Cook for 5–6 minutes until zucchini is tender.
  5. Adjust seasoning and serve: Taste and adjust seasoning as needed. Garnish with parsley or green onions before serving.
