- Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon. Drain excess fat if needed.
- Sauté Aromatics: Add the onion and garlic, cooking until softened, about 3 minutes. Stir in the mushrooms and cook until tender, about 5 minutes.
- Make the Sauce: Push the beef mixture to one side of the skillet and melt the butter. Sprinkle in the flour and whisk into the butter to form a roux. Slowly pour in the beef broth while stirring, then add Worcestershire sauce, Dijon mustard, paprika, salt, and pepper. Simmer for 5 minutes until slightly thickened.
- Finish the Dish: Reduce heat, stir in sour cream until smooth. Serve the beef stroganoff over warm rice, garnish with parsley.
