A simple and delicious recipe for Gyudon, a popular Japanese beef rice bowl dish. Tender thinly sliced beef and sweet onions simmered in a flavorful sauce, served over steamed rice and garnished with green onions and pickled ginger.

For the Gyudon:
- 1 lb thinly sliced beef (ribeye or sirloin)
- 1 onion, thinly sliced
- 1 cup dashi broth (or low-sodium beef broth)
- 1/4 cup soy sauce
- 1/4 cup mirin
- 2 tbsp sake
- 1 tbsp sugar
- 2 tsp grated fresh ginger (optional)
For Serving:
- Cooked Japanese short-grain rice
- Sliced green onions
- Pickled red ginger (beni shoga) for garnish (optional)
Instructions
- Prepare the Sauce: In a medium saucepan, combine dashi broth, soy sauce, mirin, sake, sugar, and ginger. Simmer, stirring until sugar dissolves.
- Add Onions: Add sliced onions, simmer for 4–5 minutes until tender.
- Cook Beef: Add beef to the broth, simmer for 3–5 minutes until cooked through and tender.
- Serve: Spoon rice into bowls, top with beef, onions, and broth. Garnish with green onions and pickled ginger.
Notes
- Use thinly sliced beef for best results.
- Adjust sweetness by varying sugar amount.
- Leftovers reheat well and are great for bento lunches.
