Instructions
- Preheat the oven: Preheat your oven to 425°F (220°C) to get it ready for roasting the potatoes evenly.
- Prepare the potatoes: Wash and dry the potatoes thoroughly. Carefully slice them thinly—about 1/8-inch thick—making sure to keep the base intact. Use chopsticks or wooden spoons as guides to prevent cutting all the way through.
- Arrange potatoes on baking sheet: Place the sliced potatoes on a parchment-lined baking sheet to prevent sticking.
- Season the potatoes: Drizzle olive oil or melted butter generously over the potatoes, allowing it to seep into the slices for maximum flavor and crispiness.
- Add herbs and seasoning: Sprinkle the minced garlic, thyme, rosemary, salt, and pepper evenly over and inside the potato slices to infuse the dish with aromatic herbs.
- Bake the potatoes: Place the baking sheet in the oven and roast the potatoes for 40-45 minutes, or until they are golden brown and crispy on the outside while tender inside.
- Add Parmesan cheese (optional): About 5 minutes before the end of baking, sprinkle grated Parmesan cheese on top to add a savory, melted topping.
- Serve: Once done, remove the potatoes from the oven and serve hot. Garnish with fresh herbs if desired for a fresher presentation.
