- 1 cup crushed pineapple (drained)

- 2 cups all-purpose flour
- 1 tsp baking soda

- ¼ cup chopped macadamia nuts (optional)
Instructions
- Preheat the oven and prepare the pan: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Cream butter and sugars: In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add wet ingredients: Beat in the eggs one at a time, then stir in the mashed bananas, pineapple, vanilla extract, and coconut.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Mix wet and dry ingredients: Gradually add the dry ingredients to the wet mixture and stir just until combined. Fold in the macadamia nuts, if using.
- Bake: Pour the batter into the prepared loaf pan and bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and slice: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

- For extra texture, sprinkle additional shredded coconut or chopped nuts on top before baking.
