Marinade:

  • 2 pounds boneless, skinless chicken thighs
  • ¾ cup soy sauce
  • ½ cup brown sugar
  • ¼ cup pineapple juice
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1 tablespoon cornstarch + 2 tablespoons water (for slurry)

Garnish:

  • 2 tablespoons sliced green onions
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Prepare the Teriyaki Sauce: In a medium saucepan, combine soy sauce, brown sugar, pineapple juice, rice vinegar, sesame oil, garlic, and ginger. Simmer, thicken with cornstarch slurry, and cool.
  2. Marinate the Chicken: Place chicken thighs in a bag, add half of the sauce, marinate, and refrigerate.
  3. Grill the Chicken: Preheat grill, cook chicken thighs for 5–7 minutes per side, basting with reserved sauce.
  4. Serve: Garnish chicken with green onions and sesame seeds before serving.
