- 1 can (20 oz) crushed pineapple in juice (undrained)
- 1/2 cup chopped walnuts or pecans (optional)
For the frosting:
- 1 package (8 oz) cream cheese (softened)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tub (8 oz) whipped topping (thawed)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Prepare the cake batter: In a large bowl, combine flour, sugar, eggs, baking soda, salt, and vanilla. Add the crushed pineapple with juice and mix until well combined. Fold in the nuts if using.
- Bake the cake: Pour the batter into the prepared baking dish and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan.
- Make the frosting: Beat the cream cheese, powdered sugar, and vanilla in a bowl until smooth. Gently fold in the whipped topping until light and fluffy.
- Frost the cake: Spread the frosting over the cooled cake. Chill for at least 1 hour before serving.
