Description

Indulge in the tropical flavors of Hawaii with this delightful Hawaiian Wedding Cake. A moist pineapple-infused cake topped with a velvety whipped cream cheese frosting, this dessert is perfect for any celebration or simply as a sweet treat.

Ingredients

Scale

For the cake:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 can (20 oz) crushed pineapple in juice (undrained)
  • 1/2 cup chopped walnuts or pecans (optional)

For the frosting:

  • 1 package (8 oz) cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tub (8 oz) whipped topping (thawed)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare the cake batter: In a large bowl, combine flour, sugar, eggs, baking soda, salt, and vanilla. Add the crushed pineapple with juice and mix until well combined. Fold in the nuts if using.
  3. Bake the cake: Pour the batter into the prepared baking dish and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan.
  4. Make the frosting: Beat the cream cheese, powdered sugar, and vanilla in a bowl until smooth. Gently fold in the whipped topping until light and fluffy.
  5. Frost the cake: Spread the frosting over the cooled cake. Chill for at least 1 hour before serving.

Notes

  • This cake is even better the next day after the flavors have had time to develop.
  • For added tropical flavor, top with toasted coconut or extra pineapple tidbits.
