  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 1/2 head green cabbage, shredded

Broth and Seasonings:

  • 1 can (14.5 oz) diced tomatoes with juice
  • 6 cups low-sodium vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon lemon juice

Garnish:

  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–7 minutes until softened.
  2. Add Cabbage: Stir in the shredded cabbage and cook for another 5 minutes, stirring occasionally.
  3. Cook Soup: Add the diced tomatoes, vegetable broth, oregano, thyme, salt, pepper, and bay leaf. Bring to a boil, then simmer for 25–30 minutes until vegetables are tender.
  4. Finish and Serve: Remove bay leaf, stir in lemon juice, adjust seasoning to taste, and serve hot. Garnish with parsley if desired.
