Instructions
- Preheat oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper to prepare for baking the cookies.

- Combine wet ingredients: In a separate large bowl, mix the melted coconut oil or butter, honey or maple syrup, vanilla extract, and the large egg until smooth and well incorporated.
- Combine wet and dry: Add the dry ingredient mixture to the wet ingredients and stir gently until just combined. Avoid overmixing to maintain a tender texture. Fold in the dark chocolate chips evenly.
- Form cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon for even baking.
- Bake: Bake the cookies for 8–10 minutes or until the edges turn golden brown, indicating they are cooked through.
