  • 1 egg

  • 2 cups marinara sauce (low-sugar)
  • cooking spray or additional oil for grilling

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Slice and Prep Eggplant: Slice the eggplants lengthwise, sprinkle with salt, pat dry, brush with olive oil, and grill or roast until softened.
