- 2 medium eggplants
- 1 tbsp olive oil

Filling:
- 1 cup part-skim ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tbsp chopped fresh basil
Additional:
- 2 cups marinara sauce (low-sugar)
- cooking spray or additional oil for grilling
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Slice and Prep Eggplant: Slice the eggplants lengthwise, sprinkle with salt, pat dry, brush with olive oil, and grill or roast until softened.
- Prepare Filling: Mix ricotta, mozzarella, Parmesan, egg, basil, salt, and pepper in a bowl.
- Assemble Rollatini: Spread marinara sauce in a baking dish, spoon filling onto eggplant slices, roll them up, and place in the dish.
- Bake: Top with remaining sauce, bake covered for 20 minutes, then uncovered for an additional 10 minutes until golden.
- Serve: Let cool slightly before serving.
