Dry Ingredients:
- 1 1/2 cups rolled oats (blended into flour)
- 1/2 cup rolled oats (left whole)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1/4 teaspoon salt
Wet Ingredients:
- 2 large eggs
- 1/4 cup coconut oil, melted (or olive oil)
- 1/3 cup honey or maple syrup
- 1/2 cup plain Greek yogurt
- 1 teaspoon vanilla extract
Mix-Ins:
- 1 1/2 cups finely grated carrots
- 1/2 cup crushed pineapple, drained
- 1/3 cup chopped walnuts or pecans
- 1/4 cup raisins (optional)
Instructions
- Preheat oven and prepare pan: Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- Prepare dry ingredients: In a large bowl, whisk together oat flour, whole oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Mix wet ingredients: In another bowl, beat the eggs, then whisk in melted coconut oil, honey, Greek yogurt, and vanilla until smooth.
- Combine wet and dry: Stir the wet mixture into the dry ingredients until just combined.
- Add mix-ins: Fold in grated carrots, pineapple, nuts, and raisins if using.
- Bake: Pour batter into the prepared loaf pan and smooth the top. Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For extra flavor, top with a light cream cheese glaze or spread with nut butter.
- Store covered at room temperature for 2 days or refrigerate for up to 5 days.
