- 1/3 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened applesauce
- 1/3 cup raisins or dark chocolate chips
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare dry ingredients: In a medium bowl, whisk together oats, whole wheat flour, baking soda, cinnamon, and salt.
- Mix wet ingredients: In a separate large bowl, whisk together melted coconut oil, honey, egg, vanilla extract, and applesauce until smooth.
- Combine ingredients: Add the dry ingredients to the wet ingredients and stir just until combined. Fold in raisins or chocolate chips and walnuts if using.
- Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, flatten slightly, and bake for 10–12 minutes until lightly golden.
- Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
