Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and prepare a muffin pan with liners or grease.
- Mix Dry Ingredients: In a medium bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
- Combine Wet Ingredients: In a large bowl, whisk eggs and maple syrup, then add melted coconut oil, pumpkin puree, Greek yogurt, vanilla extract, and milk. Mix until well combined.
- Combine Ingredients: Gradually fold dry ingredients into wet ingredients until just combined. Do not overmix. Fold in walnuts or chocolate chips if desired.
- Bake: Divide batter into muffin cups and bake for 18-22 minutes, or until a toothpick comes out clean.
- Cool: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
