For the soup:

  • 1 tablespoon olive oil
  • 1 1/2 pounds beef stew meat, cut into 1/2-inch pieces
  • Salt and pepper to taste
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 6 cups beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2/3 cup pearl barley
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 2 tablespoons chopped fresh parsley, optional

Instructions

  1. Heat olive oil and sear the beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Season beef with salt and pepper, then sear in batches until browned on all sides. Transfer beef to a plate and set aside.
  2. Sauté vegetables: In the same pot, add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until softened.
  3. Add remaining ingredients: Return beef to the pot and stir in beef broth, diced tomatoes, barley, thyme, oregano, and bay leaf. Bring to a boil, then reduce heat to low.
  4. Simmer: Cover and simmer for 1 hour, or until beef and barley are tender.
  5. Adjust seasoning and serve: Remove bay leaf and adjust seasoning with additional salt and pepper if needed. Garnish with fresh parsley before serving.

Notes

  • Soup thickens as it sits—add extra broth when reheating if needed.
  • For quicker cooking, use quick barley and simmer for only 35–40 minutes.
  • This soup freezes well for up to 3 months.
