Ground Beef Mixture:
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
Soup Base:
- 3 cups beef broth
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can sweet corn, drained
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can diced potatoes, drained
- 1 (10 oz) can diced tomatoes with green chilies
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare Ground Beef Mixture: In a skillet over medium heat, cook ground beef with chopped onion in olive oil until browned, about 5–7 minutes. Add garlic and cook for 1 more minute. Drain excess fat.
- Transfer to Crockpot: Place the beef mixture in the crockpot.
- Add Ingredients: Add beef broth, diced tomatoes, corn, pinto beans, diced potatoes, tomatoes with green chilies, chili powder, smoked paprika, oregano, salt, and pepper. Stir to combine.
- Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours.
- Serve: Stir before serving and adjust seasoning if needed.
Notes
- For a spicier version, add extra diced green chilies or a pinch of cayenne pepper.
- This soup freezes well and is perfect for meal prep.
