Description

Hearty Crockpot Cowboy Soup is a delicious and comforting meal perfect for chilly days. Packed with ground beef, beans, corn, and flavorful spices, this easy slow cooker soup is sure to become a family favorite.

Ground Beef Mixture:

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Soup Base:

  • 3 cups beef broth
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can sweet corn, drained
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can diced potatoes, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare Ground Beef Mixture: In a skillet over medium heat, cook ground beef with chopped onion in olive oil until browned, about 5–7 minutes. Add garlic and cook for 1 more minute. Drain excess fat.
  2. Transfer to Crockpot: Place the beef mixture in the crockpot.
  3. Add Ingredients: Add beef broth, diced tomatoes, corn, pinto beans, diced potatoes, tomatoes with green chilies, chili powder, smoked paprika, oregano, salt, and pepper. Stir to combine.
  4. Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  5. Serve: Stir before serving and adjust seasoning if needed.

Notes

  • For a spicier version, add extra diced green chilies or a pinch of cayenne pepper.
  • This soup freezes well and is perfect for meal prep.
