- 2 cups baby spinach

Instructions
- Sear the Chicken: Heat 1 tablespoon olive oil in a large skillet over medium heat. Season the chicken breasts evenly with oregano, thyme, paprika, salt, and black pepper. Place the chicken in the skillet and cook for 5-6 minutes per side until golden brown. Remove the chicken and set it aside on a plate.
- Prepare the Bean Mixture: In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for 2 minutes until they are slightly softened.
- Deglaze the Pan: Pour in the chicken broth and lemon juice, stirring with a spoon to deglaze the pan and pick up any browned bits stuck to the bottom for added flavor.
- Simmer the Dish: Stir in the cannellini beans and baby spinach. Cook for 2 minutes until the spinach wilts. Return the seared chicken breasts to the skillet, cover loosely, and let everything simmer together for 5-7 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
