For the chicken and veggies:

  • pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons butter
  • 1 zucchini, sliced into half-moons
  • 1 onion, sliced
  • 1 cup mushrooms, sliced
  • 1 cup carrots, julienned
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the fried rice:

  • 3 cups cooked and chilled white rice
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons butter
  • 2 eggs, beaten
  • ½ cup frozen peas
  • ½ cup diced carrots
  • 2 green onions, chopped


Instructions

  1. Cook the chicken and veggies: Heat sesame oil and butter, cook chicken until browned, then add vegetables and soy sauce.
  2. Prepare the fried rice: Cook carrots, add rice, peas, eggs, soy sauce, and green onions.
  3. Serve: Place chicken and veggies over the fried rice and enjoy!

Notes
