For the chicken and veggies:
- 1½ pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons butter
- 1 zucchini, sliced into half-moons
- 1 onion, sliced
- 1 cup mushrooms, sliced
- 1 cup carrots, julienned
- 2 cloves garlic, minced
- Salt and pepper to taste
For the fried rice:
- 3 cups cooked and chilled white rice
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons butter
- 2 eggs, beaten
- ½ cup frozen peas
- ½ cup diced carrots
- 2 green onions, chopped
Instructions
- Cook the chicken and veggies: Heat sesame oil and butter, cook chicken until browned, then add vegetables and soy sauce.
- Prepare the fried rice: Cook carrots, add rice, peas, eggs, soy sauce, and green onions.
- Serve: Place chicken and veggies over the fried rice and enjoy!
Notes
- Chill the rice in advance to prevent it from becoming mushy in the pan.
- Add yum yum sauce or ginger sauce for extra hibachi-style flavor.
- You can substitute shrimp or steak for the chicken.
