  1. Roast the hazelnuts: Preheat your oven to 180°C (356°F). Spread the raw hazelnuts evenly on a baking sheet and roast for 10 minutes until they are golden and toasted. Remove from the oven and let them cool for 30 minutes to allow the flavors to develop and the nuts to crisp.
  2. Remove the skins: Once cooled, rub the hazelnuts between your hands to loosen and remove the skins. This step helps to reduce bitterness and improve the butter’s texture.
  3. Blend the hazelnuts: Place the roasted and skinned hazelnuts in a high-speed blender or food processor. Blend for 3-4 minutes initially; the nuts will turn into a coarse meal and then gradually start to release oils and form a paste.
  4. Add flavorings: Add ¼ teaspoon sea salt and either scrape the seeds from the vanilla pod or add ½ teaspoon vanilla powder to the hazelnut mixture for enhanced aroma and sweetness.
  5. Blend again: Continue blending for another 4-5 minutes until the mixture reaches a very smooth, runny nut butter consistency. Stop occasionally to scrape down the sides with a spatula to ensure even blending.
  6. Store the hazelnut butter: Transfer your freshly made hazelnut butter to an airtight jar. Store it at room temperature in a dark place for up to one week, or refrigerate for up to one month to preserve freshness.
