- Prepare the Shortbread: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- Make the Shortbread Base: In a bowl, mix the all-purpose flour, granulated sugar, and softened butter until a crumbly dough forms. Press this mixture evenly into the prepared baking pan. Bake for 15-18 minutes until the shortbread is lightly golden. Remove from oven and allow to cool completely.
- Prepare the Caramel Layer: In a medium saucepan over medium heat, combine sweetened condensed milk, brown sugar, unsalted butter, and light corn syrup. Stir continuously for 8-10 minutes until the mixture thickens and turns golden. Remove from heat and stir in vanilla extract.
- Add Caramel Layer: Pour the caramel over the cooled shortbread layer, spreading it evenly with a spatula. Allow it to set for 20-30 minutes until firm and stable.
- Melt the Chocolate: Place the chocolate chips and vegetable oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring thoroughly after each, until the chocolate is fully melted and smooth.
- Add Chocolate Layer: Pour the melted chocolate over the set caramel layer and spread evenly. Let it set at room temperature or refrigerate until the chocolate is firm.
