- 1 pound boneless skinless chicken thighs or breasts
- 2 tablespoons olive oil
- 2 chipotle peppers in adobo sauce, minced
- 1 tablespoon adobo sauce
- 3 tablespoons honey
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
For the Bowls:
- 2 cups cooked white or brown rice
- 1 cup canned black beans, drained and rinsed
- 1 cup corn, fresh, frozen, or canned
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- Marinate the Chicken: In a bowl, whisk together olive oil, minced chipotle peppers, adobo sauce, honey, lime juice, garlic, paprika, cumin, and salt. Pour over chicken and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the marinated chicken for 5–6 minutes per side, or until fully cooked and slightly charred. Remove from heat and let rest for a few minutes before slicing.
- Assemble the Bowls: Divide the cooked rice among 4 bowls. Top with sliced chicken, black beans, corn, avocado slices, and chopped cilantro. Serve with lime wedges on the side.
